I won the lottery....

Ok, well NOT REALLY BUT I feel like I did:) Over something so small too:) Get ready, because you will laugh when I tell you what it is....A chest freezer! HaHa! Kaz and I have talked several times about getting one for the garage and I found one on Craigslist saturday night. I told Kaz about it while he was asleep:) and he said Yes! I was so excited when I woke up Sunday morning you would have thought I won the lottery! So, we are new freezer owners:)
It actually came in handy this week because we had another frozen meal exchange last night! I absolutely LOVE doing the meal exchange and even just making meals for our freezer! When we were re-working our budget for this year we decided to have a $20 a week budget on eating out. When you really think about it, that’s once a week and $20 for 3 people isn’t a lot! Last year, that was our worst habit because we ate out so much more! So, we have really made a conscious effort to EAT AT HOME MORE! Freezer meals have made my life SO MUCH EASIER! It has made me enjoy cooking again! We are eating freezer meals just about every night, but there have been a few days where I’ve wanted to cook and I’ve had that flexibility! 
I made several meals awhile back for the freezer, and have continued to add to them a little each week. Kind of like couponer’s making a stockpile:) On Saturday, I made 6 meals! 2 baked ziti’s and 4 mexican chicken burritos! Our freezer has enough meals for a month! 
At the meal exchange, we grew in size! We had 12 people:) Everyone made a lot of yummy meals! Some of the meals included shepard’s pie, chicken pot pie, pizza pasta bake, chicken poppyseed casserole, cheddar chicken casserole, baked spaghetti, Chicken Taco Soup, and a few other things that I can’t remember right now:) Below are a few pictures...I actually forgot to take pictures until we were already diving into the meals so it doesn't look like as much food as it was:)

Amy, I have a question for you. When you do your meal exchange, does each person bring one frozen meal for each family there? So did you make 12 of something? I am very curious about this! I used to go to a shop where you made frozen meals and I loved it! I miss it and want to do something like this for my neighbors. I would love to know how you have it set up!

Hi Amy
Since it is just you and Kaz eating, as Miss Annie most likely does not eat alot yet,how do you freeze your meals, are they for serving 2-4 people or do you end up eating a 9x13 pan of Lasagne all week? Curious as it is just my hubby and myself.

Oooh, share some recipes, please? It would be a great idea to freeze some meals for workdays - I HATE cooking when I get home from work!
